Just wanted to share my favorite pancake recipe lately! This makes quite a few pancakes, I normally get about 5-6 that are slightly larger than frozen pancakes and super fluffy.

  • around .8 cup of liquid egg whites
    -1 egg
  • 40 grams of oats
  • 113 grams of cottage cheese

Sort of optional and all eyeballed:
-baking powder
-vanilla extract
-cinnamon

The egg is also optional, just up the egg whites to 1 full cup. I think it improves the texture and they stay fluffier with a full egg, however.

  1. Beat the egg whites until stiff and fluffy. Internet recommends doing this slowly, I usually move it to full speed without much trouble.

  2. Blend everything else until smooth.

  3. Mix/fold the egg whites and the goop, slowly and softly. Plop into pans on low-medium heat. I like having making these 2 inches tall, but they can take a bit to cook through. Watch the sides until they aren't shiny anymore and then flip gently.

They deflate sometimes, but even then they tastes fine. Not as easy as kodiak pancakes, but I find these more filling and worth the effort.
