Somebody told me pellet grills can’t sear. So I tried it, and this happened. Confused

    My old Louisiana grills Whole Hog could get to over 600 degrees so had no issue searing with it.

    They can certainly sear, but the portion of the grill that can do it can be pretty small. Mine can do 2 steaks as most. 75% of the grill can’t sear.

    Very much depends on the grill. How the firebox and deflectors are laid out.

    I can’t on mine it only goes to 420 but it’s not a grill just a vertical pellet smoker 🙂

    Eh, I tried a Recteq Bullseye for a season and it just wouldn’t get hot enough.

  9. Depends on the pellet grill. My Pitboss has an excellent sear station that gets me some of the best sears I’ve ever had… I could be wrong but as far as I’m aware Traegers and other pellet smokers don’t all have those “sear stations”.

    looks like you have a unit that has a slider on the diffuser plate that allows the flames to come up and sear. obviously, that will work for searing. what people refer to are units without that feature. that being said, i have two pellets that have the slider thing and they sear great. i also have a wwpro24 that does not have the slider sear feature but am going to experiment tonight with “grilling” a steak on it. i upgraded the racks to the pimp my grill carbon steel racks and am going to set the temp to high and let it preheat for a good 30-40 minutes so the grates are hot af and then throw some oak chunks in the wood chunk drawer to get some smoke going. i’m hoping for a nice sear. timing is key here b/c i will have to at least partially close the lid to keep the temp hot in there… don’t want to bake it.

    For $2k, for the cheapest one of the bunch? That Yoder better fucking blow me and serve me a drink.

    I’ll stick to my 10 year old kettle that I got on sale at HEB for $95.

    Cook on pellet grill, sear on ripping hot cast iron, rest on salt block. Profit

    The fat in the bottom of the grill, mixed with soot, has combusted, and is lighting your food on fire.

    Your grill is filthy. Also, your food is too close to your firebox.

    You can get 450 degree temps in a pellet grill. That’s not the problem.

    Keep in mind that 450 is beyond the temp that paper naturally combusts at. As do most fats.

    So, if you haven’t cleaned your pellet stove in a while and decide to kick it to 450? All those times of cooking at low means that you’ll have tons of fat and soot at the bottom of your stove, aka bonfire.

    At least have the fire extinguisher ready. You’ll ruin your food, but at least you won’t melt all the wires and electronics.

    Seriously, if you’re going for the sear heat, then make sure you’ve taken all the grills out prior, removed as much of the firebox as you can, and then scooped out all the crap, using a hose, soap and scrubbers to remove the layers of oil and soot that will layered in the bottom. Otherwise, you’re going to have a massive fire.

    I’m too lazy to take the grill and cover plate off. I just put a cast iron griddle in the smoker at 500 and let it sit for 20 minutes. Then I sear them on the griddle, 2 min per side and then let them bake in the smoker for a bit.

    Pellet great for smoking. Propane great for grilling.

    The ability to sear is literally a selling point for Yoder smokers. The plate slides off directly over the fire pot.

    There is a reason they start at $2,500.
