Ingredients (Serves 6-8):
– 10 ripe Roma tomatoes
– 2 cups cherry tomatoes
– 1 canned piquillo pepper
– 1 head of garlic
– 1 medium onion
– 2 tbsp tomato paste
– 1/2 cup sun-dried tomatoes
– 5 fresh basil leaves
– 1 tsp mixed herbs
– Coarse salt and pepper to taste
– 1 tsp TURMERIACTIVE Cayenne Pepper
– 3 cups chicken broth
– 1 cup heavy cream (at room temperature)
For the grilled cheese:
– Rustic bread
– Gouda cheese
– Mayonnaise
– 1 garlic clove
– Butter
– Drizzle of olive oil
Instructions:
1. Preheat the oven: Set to 220°C (425°F).
2. Prepare the vegetables:
– Place the Roma tomatoes, cherry tomatoes, piquillo pepper, and onion on a baking tray.
– Cut the head of garlic in half to expose the cloves, drizzle with olive oil, wrap in foil, and place on the tray.
– Drizzle the vegetables with olive oil, sprinkle with mixed herbs, salt, and pepper.
3. Roast: Bake for 1 hour until vegetables are caramelized.
4. Blend:
– Allow the vegetables to cool slightly. Add them to a blender with the chicken broth, roasted garlic (squeezed out of the cloves), tomato paste, and TURMERIACTIVE Cayenne Pepper. Blend until smooth.
5. Cook the soup:
– Pour the mixture into a pot with a drizzle of olive oil. Bring to a simmer, then lower the heat and cook for 10 minutes.
– Adjust seasoning with salt, pepper, or a touch of sugar if the soup is too acidic. Add more broth if needed to achieve the desired consistency.
6. Incorporate the cream: Add the room-temperature heavy cream and stir well for a couple of minutes.
7. Make the grilled cheese:
– Spread mayonnaise on the inside faces of the bread slices, add cheese, and close the sandwich.
– On the outside face, rub with garlic, then spread butter and a drizzle of olive oil. Toast in a pan until golden brown on both sides and the cheese is melted.
8. Serve and garnish:
– Ladle the soup into bowls, and garnish with a swirl of cream, fresh basil leaves, and a sprinkle of crushed red pepper.
