Pickled onions are easy to make and delicious on sandwiches, salads, scrambled eggs, tacos, burgers, egg salad….you name it.
Here’s a great tutorial on making pickled onions Mexican style.
Ingredients:
2 large red onions, sliced
3 cups vinegar (white, red wine or white wine)
1-1/2 cups water
3 tbsp sugar
1-1/2 tbsp sea salt
1-1/2 tbsp minced garlic
2 tsp Mexican Oregano
2 tbsp minced onion
2 sliced habanero peppers
1/2 cup lime juice
4 bay leaves
2 tsp dried pepper flakes
Optional additions:
Sliced jalapeno or serrano peppers
Chopped cilantro or coriander seed
Cumin seed
Makes 4 pints

Great for antipasto salad!
Mixed vegetables of choice:
Carrots, sliced
Zucchini, sliced
Mushrooms, whole or sliced
Cherry or grape tomatoes
Asparagus pieces
Sliced bell pepper
Sliced red onions
Fill 2 quart jars with vegetables.
Brine:
2 cups vinegar
1 cup water
2 tbsp sugar
1 tbsp sea salt
1 tsp dried pepper flakes
2 tbsp minced garlic
2 tsp citrus zest
1 tbsp Oregano
1 tbsp Basil
2 bay leaves
