Creamy Chicken-Broccoli& Cheese Soup

This s creamy, cheesy Chicken Broccoli Soup recipe is so fantastic you’ll be looking for an excuse just to make it again and again. It’s loaded with broccoli florets, tender chunks of chicken, veggies and cheddar cheese. Once the prep is done, this soup is on the table in under 30 minutes.

Ingredients
2 large chicken breasts
3 slices bacon, sliced or chopped for garnish (optional)
2 tablespoons unsalted butter
1 tablespoon olive oil
1 large onion finely chopped
2 medium carrots julienned
3 tablespoons all-purpose flour
3 cups low sodium chicken broth
4 cups broccoli florets cut into ½-inch pieces (about 1 pound broccoli)
2 cups half & half or 1 c. heavy cream and 2 c milk)
1 tsp salt
1/2 tsp paprika
1/2 tsp granulated garlic
1/4 tsp dry mustard
1/4 tsp cajun seasoning (optional)
2 tbs black pepper
1 tsp chicken bouillon (optional)
1 tbsp Italian seasoning (optional)
2 tbsp oregano
2-3 c cheddar cheese shredded (used 1 c white cheddar and 2 c mild cheddar) dealers choice
additional shredded cheddar cheese for garnish
