This is so different and complex. I love all those spices. I can see how it's an explosion of flavor. Then the sweetness of the apricots…delicious!

Albert, I saw this and just had to make it! I had everything except for ginger, which I substituted with fresh ginger, and coriander, which I just substituted with fresh cilantro. It tastes amazing with those warming spices and is a wonderful meal for today, a meatless Friday in Lent. Thanks for this delicious recipe and greetings from South Carolina! ❤
