I’d trim em a bit, render the trimmings in an iron skillet, season them, turn the skillet up to screaming hot, cook em really fast, then serve em with chimichurri or salsa verde…but that’s just me.

Look up pork coppa chop. Should be same thing.
Grill it until medium like a good steak.

Gotta cook em longer than a normal pork chop or beef steak. Salt and pepper, hot pan with oil and butter, covered, 8-10 minutes per side to 145-155.

Sliced money muscle off of the Boston butt. I’ll give them a generous bbq rub then grill at 165°C until internal temp is 85-90°C.

Sear and simmer in crushed tomatoes with sliced onions and peppers. A cup of chicken broth goes a long way. Also a healthy does of paprika.
