Pretty much as the title says. Full disclosure this was the two previous years effort as it was an over wintered plant in its second year. It seemed very lush and had a substantial harvest but did I lose some potency by not stressing the plant? Don’t get me wrong it tasted amazing and was hot AF for me, I’m usually happy with a jalapeño, but it did make me wonder about heat level vs plant health.

i had exact the same last year- but i thought it was maybe from too much sunlight ( on the outside of the bus they were all black, inside they still were red
I had the same thing happen with a second year jalapeño. First year was great, low but not no heat. Second year… basically bell peppers.
I never found a significant difference in heat level when stressing the plants. I should mention i mostly grow superhots tho. So far, in my growing experience i can tell good soil is number 1 priority.
