
I bought the Beef Loin New York Shabu Shabu cut from Costco yesterday, and I noticed the meat has already turned brown with a slight purplish tint. Is it still safe to eat, or should I exchange it? I understand that beef can turn brown after being exposed to air, but I wasn’t expecting it to look like this just one day after purchase.

I feel like the purple is fine but the green tint is iffy
Eat it. If you get violently ill, you’ll know it was bad.
Really, though, there’s no way for anyone in here to answer your question. Yes, discoloration is normal, and if it smells fine and doesn’t feel slimy, you’re probably good. That said, a few of those pieces look particularly colorful. You’re either going to have to trust your own judgment or find someone else whose judgment you trust to determine that for you.
If you don’t feel comfortable making that decision for yourself, you’re better off exchanging it if that’s an option–especially for what appears to be almost $70 worth of beef.
That green looks fucking terrible. I would exchange it if it’s only a day old.
With that fat chunk it looks like it’s sliced too thick for shabu shabu…

Too thick for shabu shabu…just get the hot pot beef or lamb rolls …
