Need help recreating Katsuya Japanese sauce at home

I had this really delicious Katsu sauce from Katsuya and really wanna figure out how I can make it myself at home. I’ve tried a few different Katsu sauce recipes but haven’t had any luck yet. I think it might not actually be a Katsu sauce and according to their delivery menu on doordash, it’s called “Japanese sauces” with no further descriptors.

Serious Eats is the standard bearer for online recipes in my book. Here is [their tonkatsu sauce recipe](https://www.seriouseats.com/tonkatsu-sauce-japanese-barbecue-recipe). You can start there and then adjust ingredients based on what you like about Katsuya’s sauce. E.g. if you want it sweeter, add some more sugar; if you want it tangier, add some more ketchup and/or Worcestershire; if you want it saltier, add more soy and/or salt. The only ingredient I can think of that isn’t in that recipe that might be in Katsuya’s is MSG, so you can try adding that too. Keep tasting and adjusting until you find what you’re looking for.
Your only other alternative is to try to get somebody there to tell you, which they may or may not, depending on whether they treat their sauce recipe as a trade secret or not. But given how these things tend to work, it’s probably either a commercially available sauce, or a commercially available sauce with one or two added ingredients.

Apparently its a secret recipe of 5 seasonal fruits, 10 vegetables, and 6 organic herbs according to one of their facebook posts.
These two videos are good places to start. Second video is sadly all Japanese but looks like the most similar in colour to Katsuya imo. The first one has eng subs.
If you have unlimited money though you could try opening enough katsuya locations in Ontario for them to reach 20 locations which would force them to have nutritional information available to the public.
