Turn fresh asparagus into a creamy pasta sauce! This concept was inspired by “The River Cafe” cookbook—meld the asparagus into the sauce, and preserve bits of crisp, fresh bites intact.

Our culinary production director Wes Martin pulses the asparagus in a food processor and uses it two ways—half, sautéed until tender, and the other half kept al dente. A cup of cream binds the asparagus into a silky sauce just thick enough to coat the pasta while a sprinkle of lemon zest and a squeeze of lemon juice at the table brighten up the flavors.
