  1. With all due respect it is iranian and called barbari and in istanbul I've seen only in ramadan as you said in bakeries.
    And in iran they make rounds like this but bigger and original one is flat and long and thine and crispy .it is the most delicious bread.

  2. Turkish Ramadan Pide

    1 cups warm water
    1 teaspoon sugar
    1 teaspoon yeast
    1 teaspoon salt
    2 1/4 cups all purpose flour
    1 tablespoons toasted, Sesame seed
    1 tablespoons black seeds

    In a large bowl put the water, yeast, sugar, and let it sit for 5-10 minutes then add the, flour, and salt mix by hand or mixer for 7-8 minutes. If the dough is to sticky add more flour 1/4 cup each time until it feels like play dough. If the the dough is to hard add water little at a time. When the dough feels right use the oil on your hand knead in few more time and allow the dough to rest in a warm area covered with a warm towel for 1 hour. The dough should double in size. Now you take the dough out and make it into large balls out of them make sure they’re equal in sizes. Set them on a baking tray place in the oven to let them raise. Let it sit for 30 minutes the dough should have raised. Now start flattening out the dough by making the middle a dome then you’re basically gonna do long lines one way and long lines. another way by indenting with your hand make sure you put round circle
    Around the edges. Put it back in the place ltray what is rise for another 15 minutes. Brush the oil or egg wash on the top sprinkling the sesame seeds and black seeds place l in the oven at 450° for 15 to 20 minutes until golden brown.
