HOMEMADE SPINACH PASTRY

Ingredients:

2 cups water

5 cups flour

2 tablespoons salt

1 stick butter

1 cup oil

800g spinach (finely chopped)

2 small onions (finely chopped)

1 cup mozzarella cheese

1 cup feta cheese

1/4 cup oil

Salt, black pepper, red pepper flakes (to taste)

1 egg and 1 tablespoon yogurt (optional for topping)

Instructions:

Prepare the Dough:
In a large bowl, combine the water, flour, and salt. Knead until you get a firm dough, but not too stiff. If necessary, add extra flour to adjust the consistency. Let the dough rest for 30 minutes.

Prepare the Filling:
Finely chop the spinach and onions. In a bowl, mix the spinach, onions, mozzarella, feta cheese, oil, and season with salt, black pepper, and red pepper flakes to taste. Mix everything well.

Roll the Dough:
After the dough has rested, divide it into small pieces and roll each piece out with a rolling pin. Sprinkle flour to prevent sticking. Roll each dough piece into a thin circle.

Assemble the Pastry:
Brush each dough circle with the prepared oil mixture. Spread the spinach filling on one half of the dough, then roll it up. Twist the dough slightly before placing it on a greased baking tray. Repeat with the remaining dough pieces.

Bake:
Preheat your oven to 425°F (220°C). Brush the remaining oil on top of the pastry for extra crispiness. Bake until the pastry is golden brown and crispy on both sides.

Serve:
Let the pastry cool slightly before serving. Enjoy the crispy, delicious spinach pastry!
