


How did I do? I feel like it is a little dense but it tastes great. Let me know what I can do to improve.
Ingredients
150g active starter
350g water
500 bread flour
10g salt
Mixed starter, water and flour.
Let rest for an hour then added salt (1st round of stretch and folds) let sit for another hour ( 2nd round coil folds ) then 1 more hour ( 3 third round coil folds ). I then let it sit on the counter for 4 hours before pre shaping ( letting it rest on the counter for 20 ) then shaping it again and letting it cold proof in the fridge overnight, Took it out in the morning, scored baked at 450 for 20 then 400 uncovered for 40 mins. I let it rest for a few hours before cutting.

Can’t tell it’s your first loaf at all!!
Looks great, better than most of my loaves year in. I think you could let if proof longer and that would even out the crumb (less big holes and less dense in the other places).
