Edit: forgot to add, i followed the frying instructions in the batter recipe, I only used the seitan recipe for the seitsn itself Also, the secret to grtting all those yummy craggly bits is to flick some water in the spiced flour mixture then mix it in, ro this a few times until you see a bunch of crumbs form then you’re ready to start coating
