It's a mixture of Brokkoli, carrots, mushrooms and summer squash.
I'm trying to make things like this taste good to eat more veggies. Currently it's somewhat edible.
What could I add?

Salt, pepper, garlic and onion powder. Spritz with a bit of oil before adding the seasoning, unless you are trying to avoid oils. That’s how I do my veggies usually. No complaints from my family so far…

Toss it in a bit of olive oil? Roast things that need a long time first and keep adding stuff. First carrots than add zucchine and than broccoli.

I toss my veggies with a splash of olive oil and add some pepper and whatever seasoning I feel like. Sometimes I do garlic. Sometimes I add dill, rosemary, or basil. It just depends on what you like.

Oil helps your body absorb some of these veggies‘ nutrients better, will help seasonings stick, will lead to better browning and can add flavor depending on what you use. Often times you‘ll find spice blends, you could start with one of those plus a dash of salt, that way you don’t have to buy 5 bags of herbs and mix them yourself. Lastly, because nobody mentioned it yet: curry/masala spice blends might work well.

Once I get vegetables to a proper roasted state with olive oil, I season with black pepper, red pepper flakes, splash of soy sauce and drizzle of balsamic, toss them and then pop them back in for a few more minutes to glaze. This makes literally any roasted vegetable taste delicious.

Good for you, trying to eat healthy. If you want to eat more veggies but actually like them, this air fryer method has been a game-changer for me. Super easy, tastes great, and it reheats fast.
Here’s how I do it. Air fry each veg separately (they all cook at different speeds), then mix and freeze them together in one big container. When you’re ready to eat, just scoop out a portion and toss it back in the air fryer — crispy and hot in 5–7 minutes.
I like to use a simple Italian flavour profile so they all work together: cover in olive oil, add garlic powder, oregano, salt, pepper. Optional: onion powder, basil, and/or a pinch of chili flakes.
Cook everything at 400°F in the air fryer. Turning half way through. Just pay attention and adjust as necessary. Not all air fryers cook the same way.
– Carrots (slice into sticks): 18–20 min – Zucchini (half-moons): 10–12 min – Broccoli (small florets): 10–12 min – Red onion (wedges): 10–12 min – Red bell peppers (strips): 10–12 min – Cauliflower (small florets): 12–15 min – Sweet potatoes (small cubes): 15–18 min
Tips: – Cook in batches so they crisp up properly. – Don’t overcrowd the air fryer. – Let veggies cool completely before freezing. – Freeze them all in one big bag or container for easy grab-and-go. – Mix them up and reheat from frozen at 400°F for 5–7 min, turn halfway through.
Super flexible, super tasty, and way better than steamed.
