We have this in Barbados… we call it lunch cake but I never knew the history or how to make it! Will be trying it.

What a throwback! My dad always made me a packed lunch but I always lusted after the kids hot meals at school and always really wanted the pudding, especially the rice pudding with 3 chocolate buttons on top.
Once (accidentally) my water bottle spilt all over my sandwiches in my lunch box and I had to have a school dinner. The second time (intentional) was within the same week because I’m dense (or at least I was in year 2, hopefully that’s changed somewhat?) and I knew they had jam rolypoly on Fridays and I found a foolproof method to get in on that goodness.
…My dad stopped packing my water bottle in with my lunch after that. Icarus. I was so close to this happening on the regular, but I peaked too soon.

This one’s a British classic & goes great with custard! There’s a fluffy vanilla sponge, a simple white icing and loads of rainbow sprinkles…
