Ingredients:
* Red lentils 200gr (1 cup)
* Onion 1
* Garlic 2
* Carrot 2-3 (1 cup)
* Tomato paste 2tbsp
* Sweet potato 1 large
* Oregano 1tsp
* Paprika 2tsp
* Cumin 1tsp
* Olive oil 2tbsp
* Salt
* Black pepper
* Water 1l
* Parsley (to serve)
Directions:
1.Sauté the chopped onion and garlic in a large pot with olive oil until soft. Then add the tomato paste, along with the chopped carrots, sweet potato, and red lentils. Cook for 5 minutes, stirring to combine.
2.Season with paprika, oregano, and cumin, then cover with water and let everything cook for about 20-30 minutes, until the vegetables are soft.
3.Using an immersion blender, blend everything until you achieve a smooth consistency.
4.Serve with a drizzle of olive oil and some freshly chopped parsley.
