Try it with chogochujang (Korean sauce based on garlic, gochujang, honey, and vinegar). The sweet garlic flavor goes with fatty salmon incredibly well

Sushi chef taught me, the fatter the fish, just add a little wasabi (can’t taste it) to bring out the sweetness of the fish. That’s how I enjoy those types of sashimi now.
If you get a chance, get some salmon toro… it will melt in your mouth.
