This is a great pasta salad to start off an impressive family get together or even a fancy date night. You can switch up the cheese selection if you’d like, but burrata really does work nicely especially if you have some garlic toast to smear it on for good measure. Ingredients:
Pasta Salad:
2 cups dried fusili pasta
1 tbsp garlic powder
3 tbsp oregano
3 tbsp English pea puree or Pesto (see below links)

1 tbsp lemon juice
3 tbsp grated parmesan
Gremolata:
1/4 cup toasted almonds, sliced
1/2 cup fresh picked parsley
2 tbsp thinly sliced or curled lemon zest
2 tbsp olive oil
salt and peper to taste
3-4 Campari tomatoes, quartered
2 tbsp olive oil
1 tbsp dried oregano
salt and pepper to taste
1 whole round of burrata
1 tbsp olive oil to top
2 tbsp aged balsamic to finish
