Candied Fruit berries are a classic treat; their tart flavor, sweet coating, and crunchy texture are just so delicious and nostalgic.

Material: Berries/fruit: 20-30, Sugar 400g, Water 480g

  1. Heat sugar and water in a thick pot over medium heat.
  2. Once the syrup reaches 248°F, reduce to low heat; cooking takes about 10-15 minutes.
  3. Cook until the syrup reaches 284°F, then lower the heat. Prepare ice water, ensuring the room temperature is 79°F.
  4. When 340-350°F, quickly dip the fruit skewers in the syrup, coating evenly, then cool in ice water. Maintain the temperature above 300°F, coating all fruit within 5 minutes.
  5. Skewer the fruit or place it on the non-stick surface. Cool down for 20 mins.
