  1. This light and savory tart is the perfect spring dish—flaky puff pastry layered with whipped ricotta, fresh tomatoes, mozzarella, and a sprinkle of pepperoni. Finished with a balsamic drizzle for the perfect bite.

    Ingredients:

    1 sheet puff pastry, thawed

    1 cup ricotta cheese

    1 garlic clove, minced

    1 tbsp fresh chives, chopped

    2–3 ripe tomatoes, sliced

    1 ball fresh mozzarella, sliced

    2–3 tbsp diced pepperoni

    Balsamic vinegar, for drizzling

    Optional: extra chives or herbs for garnish

    Instructions:

    1. Preheat oven to 375°F (190°C).

    2. Line a tart pan with puff pastry and press it into the edges. Poke holes in the base and sides with a fork.

    3. In a bowl, mix ricotta with minced garlic and chopped chives. Spread evenly over the puff pastry base.

    4. Alternate tomato and mozzarella slices on top of the ricotta layer.

    5. Sprinkle with diced pepperoni.

    6. Bake for 25 minutes or until the crust is golden and the cheese is bubbling.

    7. Let cool slightly, then drizzle with balsamic vinegar before serving. Garnish with extra chives if desired.
