2 blocks (800g total) firm tofu, 1/2 cup brown sugar, 1/2 cup peanut butter, 1/3 cup coconut milk, 1 tbsp oil, 1 tbsp lemon juice, 1 tbsp tomato paste, 1/4 brown onion (if mixing with a spoon in a bowl, finely dice the onion), 1 tsp ginger, crushed, 1 tsp garlic, minced, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp ground coriander, 1/4 tsp chilli powder, 1/4 tsp turmeric, Garnish, 1/4 cup peanuts, 1/2 lime.
Method: 1. Tear tofu into rough chunks, place in a bowl and then set aside. 2. Add all remaining sauce ingredients to a bowl or mini chopper/blender. 3. Blend until smooth. 4. Pour half of the satay sauce over the tofu, stir to coat. 5. Optionally marinade if you are making it ahead of time. 6. Thread tofu pieces onto skewers, so that the pieces are touching lightly. 7. Barbecue, grill or bake until cooked (~20 mins) 8. Meanwhile prepare the garnishes, chop the peanuts and slice the lime into wedges. 9. Serve and enjoy. Can be eaten with rice or a salad to make it more of a meal, or enjoyed as a snack of its own.
