Is it my imagination or there’s no eye in these “rib eye” steaks?

    It’s because they are grass fed and grass finished. Grass = no fat.

    It’s at the bottom of the steaks, bottom of the picture. Eye is very thin, almost looks like a cap.

    Actually, it’s all eye. The “eye” of the ribeye isn’t that fat in the middle (I forget the name) but the longissimis dorsi (sp?) which is a part of the meat.

    That being said, those are leeeeeeeean. That does not look appetizing to me.

    One end has less “swirl”/fat. It can look a lot like ny but i can tell it’s not.

    There’s no marbling, for me that means not purchasing. Grass fed, so I’m not shocked.

    One end of the loin is referred to as ribeye or rib end steaks. No fat cap. Halfway through you start to get the fat cap and they are then called delmonico steaks. Grass fed will generally have a lot less fat as well.

    They have no marbling or cap meat. It’s all eye.

    These are all the last cuts of a small cow. The tender cap meat gets smaller as you go down the rib.

    On smaller cows, especially grass fed/finished, it can be damn near non-existent about halfway down.

    You can buy all ribeye caps (heart attack pieces) from costco and tape those delicious suckers on the ends there
