Pimento Cheese is shredded sharp cheddar, pimentos, mayo (Dukes), and hot sauce (Texas Pete for no heat or Louisiana or Crystal for heat). Crazy simple. Hot sauce is what makes pimento cheese taste like pimento cheese. Don’t get crazy, but it’s more than you think. Only add enough mayo to make it spread. It’s really easy to add too much. Past that, enjoy!
