My local Thai spot doesn’t even need a note, if you order their “extra spicy” it might be a little hot the first time, but if they see you reorder they know you’re serious and give you the real deal if the first one wasn’t. First time I’d ever gotten a capsacin stomach ache after like 20 years of eating whatever spicy stuff I wanted. lol

Pad Thai is not intended to be spicy. You’ll really get more mileage from a traditionally spicy dish.
