This is so delicious & very comforting. You have to give this a try. The dish itself is easy to make, but get your lamb in the slow cooker early on so it has plenty of time to get nice & tender.

Ingredients: Serves 3-4

1 x lamb leg (about 700g) – You can use lamb shoulder also *
2 x lamb stock cubes
1.5 litre water

* You can also use chicken with this recipe but adjust the cooking time & use chicken stock.

1 x onion (peeled & roughly chopped)
2 x celery stalks (washed & roughly chopped)
3 x garlic cloves (peeled & finely chopped)
1 tsp ground cumin
1 tsp ground turmeric
1 tsp ground coriander (or coriander seeds crushed)
400g chickpeas
400g chopped tomatoes
50g red lentils
pinch chilli flakes
2 x bay leaves
3 x large potatoes (peeled & roughly chopped)

To serve:
Fresh coriander
Fresh flat leaf parsley
* washed & roughly chopped
