I just recently got into smoking, I was pretty proud of this
Smoked it for 13 hours and tried to maintain heat between 225-250. I pulled it at internal temp of 203
I let it rest for am hour.
The bone came right out with no meat on it, it was awesome
Here's my question, what cut was this actually? The label said pork butt shoulder but those are two different things.

That is some serious bark. Nicely done.

Shoulder, just a weird bbq term.
    Nice nice nice bark!

  3. Pork butt and pork shoulder are the same thing. A pork butt does not come from the butt of the hog. It’s from the shoulder. It was called a pork butt because of the way they were shipped way back in the day. In a barrel that was called a butt.

It is a pork shoulder. Upper part near the shoulder socket is the Boston butt. Lower part is the picnic ham. I’ve smoked them both but usually go with Boston butt cut.
