    Friday night is pizza night here. I used to skimp on the cheese because it would get too greasy when baking but after fine tuning the baking, I get great results without all the grease separating

    63% hydration all trumps flour. 60 minutes room temp then stretched and folded 4-5 times. Balled then into fridge for 3 days.

    Sauce is Centeno San Marzano tomatoes. 1 tsp salt. 1tsp sugar. 1 tsp garlic powder. 1 tbs tomato paste. Oregano to taste.

    Cheese is Grande pre-shredded (yes! No anti cracking agents) east coast blend
    Baked at 535 on a 1/2 inch steel, 2nd from top rack, 8 minutes. Broiler in between pies.

    Crust is crispy and delicious

    It costs alot for a big pie, i like salami pepperoni sausage bell pepper onion capicola olives to, 👍
