    I keep a pinned list of good looking sushi spots on Google Maps, just in case I happen to be in an area. There are a few places around Dallas and Fort Worth that caught my eye, and I pass through DFW airport often, but have never had time to explore. After a missed connection yesterday morning and tons of time to kill, I made the most of the opportunity.

    Hatsuyuki in Fort Worth is a small, fairly casual spot, but at the same time it’s all business. Just one big sushi bar with a truly impressive list. I don’t think I’ve seen such an extensive menu outside of Japan.

    Once you put your order in, it’s served one piece at a time—not unlike you’d see at an omakase setting, though in this case you’re choosing what you want. Great for trying a few things at a time at a relaxed pace, and I really feel like an uni gunkan *right* when it’s been made and the uni is still crisp, is heaven.

    100% totally recommend. No reservations, just show up and get in when you can. At noon on a Friday it was packed with a 30-60 minute wait to get in. Absolutely worth it IMO.
