Feeling Peckish? This slow-cooked ox cheek recipe is pure comfort food. Braised in red wine with aromatic herbs and classic mirepoix, the meat becomes incredibly tender and rich.
Served with French-style butter-glazed carrots and creamy mashed potato, this dish is all about deep flavors and perfect textures.
Ingredients:
Slow-Cooked Ox Cheek:
– 2 ox cheeks
– 2 carrots (chopped)
– 1 onion (chopped)
– 2 celery sticks (chopped)
– Bulb of garlic
– 500ml red wine
– 500ml beef stock
– 2 sprigs rosemary
– 2 sprigs thyme
– Salt & pepper to taste
French-Style Carrots:
– 4 large carrots
– 25g butter
– 1 tsp sugar
– 200ml water
– 2 star anise
Creamy Mashed Potatoes:
– 4 large potatoes (peeled & chopped)
– 50g butter
– 100ml cream
– Black pepper to taste
Instructions:
Slow-Cooked Ox Cheek:
1. Season ox cheeks with salt and pepper.
2. Sear them in a hot pan until browned on all sides. Remove and set aside.
3. In the same pan, sauté onions, carrots, celery and garlic until softened.
4. Add tomato purée and red wine and let it reduce by half.
5. Pour in beef stock, add rosemary and thyme, then return the ox cheeks to the pot.
6. Cover and slow-cook for 3-4 hours until fork-tender.
7. Filter off the cooking liquid into a pan and add butter and reduce until the sauce coats the back of a spoon.
8. Add you ox cheek to the sauce to keep warm and coat with the sauce.
French-Style Carrots:
1. In a pan, add carrots, butter, sugar, water, and star anise.
2. Bring to a gentle simmer and cook until carrots are tender and glazed.
Creamy Mashed Potatoes:
1. Boil potatoes until soft, then drain.
2. Mash with butter and cream until smooth.
3. Season with black pepper.
