Ingredients:
– Eggs scrambled with diced mushrooms, carrots, Thai chili peppers & onion generously seasoned with salt, black pepper & Trader Joe’s Elote seasoning.
– Steamed, mashed sweet potato
– Shredded cheese
– Rolled in roti (Indian style tortilla made from whole wheat)
– Dash of sriracha sauce
– Wrapped in aluminum foil reused from last time’s breakfast muffins.

Tip: scrambled egg/ veggies and mashed sweet potato stick to each other well making rolling in the burrito with cheese a lot easier. Roti, instead of regular tortilla, is smaller and this tip came handy.

Rotis are a regular part of my diet as are eggs, and I wanted to add more vegetables to my breakfast. Steamed potato, however, isn’t something I eat often. Recently started consuming sweet potato more often, and so I’m excited to try out this recipe. I also am breastfeeding and hoping this burrito gives me just the calorie boost I need.
