Personally I think meat paired with ramen should be thin and soft. The thicker beef might be a little chewy or harder to bite off compared to the traditional chashu pork or pork belly typically used.
Maybe slicing the beef into thinner strips would be more ergonomic.

Looks good to me… I’d look up how to do a soy sauce egg if you’re gonna go all out with ramen, would really improve the taste

For ramen, you can get the butcher or grocery store to cut it Shabu Shabu style. It’s the best way, then you can just cook it in the broth.

This is what I do with leftover steaks. They slice easier when they come out of the refrigerator and I tend to slice them thinner.
