I’ll edit to add more thoughts later, but this was an excellent * meal with solid execution of well conceived dishes with interesting flavor and texture combinations.

I don’t live in NYC but I have visited often and had the good fortune to dine at WD-50 many times. 63 Clinton is across the street from where WD-50 was and while very different restaurants with very different chefs 63 Clinton continues the history of interesting and fun dining on the LES.
Great vibe, full of energy. I’m old (60) and my wife and I were clearly the oldest people in the restaurant. They were extremely attentive to our dining restrictions/preferences while not changing their dishes, which is exactly what I like to see in a restaurant with a single fixed menu.
Potentially my favorite course was the first one, the breakfast taco, with aijitama (soy egg), hash browns, and smoked trout roe. Super deep smoky flavor and excellent texture. Messy (the base is a flour tortilla – it really is a taco) but tasty.
Very good dry-aged hiramasa with a refreshing citrus base, then arroz mariscos which tasted like the bottom of a pan of paella (in a good way). Crispy, crunchy, rich with strong chorizo along with squid. I added a langoustine which made it luxurious as well.
The asparagus was a well-conceived dish with what I think was burrata, honey, and anchovy along with extremely mild asparagus.
I’d also call out the lamb neck, which I started to eat before I took a picture. The pea shoots and pea pistou were the real stars here, a clear taste of spring.
The almond granita as a first dessert was excellent – very refreshing and a good mix of textures. The finale (also partially eaten) was a bone marrow cake. Great texture kind of like a canele and well-executed but I would have liked more punchy flavors.
Service was top notch and they have a great wine list. The somm was extremely engaging and pulled something for us that wasn’t on the list yet after we spoke.
Overall very good value for the quality of the meal, great vibes, and a place I wlll return to.

I thought 63 was a little ehh for a star.

We went twice with a year in between and it seemed like nothing much had changed – the dishes were pretty much the same. Service was good. Everything a bit rushed if you are used to fine dining in Europe. It was probably the best starred experience we had in NYC. Eleven Madison was not as good. But maybe that doesn’t really help as reference.
