Please forgive me. I can’t figure out how to have this text when I submitted the picture. I’m on a Mac, using old.reddit.com.
I also wanted to add another picture that shows I sometimes mix the potatoes with the eggs too, this time they were separate.
Sorry, the beans are out of focus. This is what I make at least 3 times a week. Usually for breakfast/lunch or early dinner. Pinto beans from the slow cooker with only salt and pepper. Chorizo and eggs. Potatoes chopped and fried/sautéed (They don’t look all the way cooked, but I cook until I can stick a fork in easily). Smashed plain avocado. Store bought flour tortilla.
I usually already have the ingredients at home, so it’s easy to cook up, maybe 15-20minutes. I’ll only use avocado if I already have one. Sometimes I’ll run to the store and grab one while the potatoes are cooking.
Let me know how much it sucks, or doesn’t suck, or isn’t authentic.
Thanks!

Just missing the salsa or what I take to be avocado chunky salsa verde?
Looks very good and totally something I would have for breakfast,

The potatoes need to be in the chorizo. This is just bad

Good job OP! I don’t usually do potatos with my eggs but what’s important is that you like it. I would add a big piece of onion to that slow cooker and a couple bay leaves for extra flavor and easier digestion!

Frying the potatoes with the chorizo will infuse them with sooo much flavor! And then mixing in the eggs at the end with everything, yum.

I cheat by using tater tots but make this a lot too
