I remember making this 30 years ago in college, I seem to remember a quirk about the name, something to do with apples?
Add a good dark or spiced rum to that drizzle, and you get a nice boozy pineapple upside down cake! ^-^
My mother has made this for years. Only she also adds Maraschino cherries with the pineapple. Always a family favorite during family dinners.

just wondering why you didnt add the pineappe to the hot pan to caramalise before letting it cool to add the cake mix.

I do my upside down cake using corn bread. For a breakfast/brunch I put meat under, above (?) what ever, the fruit layer. Just make sure the meat (sausage, ham, bacon) is cut up fine or it will pull out and make a mess. Found that out the hard way. Also try it with bananas.

John, I've never made an upsidedown pinapple cake successfully yet. The middle pineapple ring always sinks slightly. Never stays like your photo. Any thoughts. It's not life-threatening as the cake tastes wonderful, just puzzling. Alan
