Ingredients:
Jasmine rice – 1 cup, 2 large carrots peeled and shredded, 3/4th cup frozen Edamame shelled beans, 3 cloves of garlic peeled and crushed, 1/4th cup thinly sliced sweet basil leaves, 2 tablespoons cooking oil, 1 tablespoon toasted sesame oil, 2 tablespoons dark soy sauce, 2 teaspoons crushed red pepper flakes, salt to taste.
Instructions:
Step 1 – Cook 1 cup Jasmine rice with 2 cups of water. I use an electric rice cooker. When done, let it cool and then fluff up with a fork.
Step 2 – In a skillet, heat cooking oil on medium heat and saute shredded carrots and edamame beans for about 8 to 20 minutes until the beans are cooked.
Step 3 – Add crushed garlic, and saute for another couple of minutes. Add the rest of the ingredients and turn the stove off.
Step 4 – Finally, add in the cooked rice and stir everything evenly. Enjoy the fried rice with a drizzle of sriracha hot sauce if desired.
