The Place I only discovered Pulsii French Bistro & Bar recently even though it was opened last August. Located along the buzzing Tras Street in Tanjong Pagar a few doors down from Tonshou, it used to be called Pulsii Woodfire Restaurant & Bar and its new name is a rebrand, in addition to their refreshed menu which now focuses on a selection of small plates and mains at wallet-friendly prices.
Helmed by Chef Daisuke Yoshikawa who has his expertise in French and Japanese cuisine, Pulsii is a portmanteau of “pulse”, which represents movement and vitality; and “ii”, which means “good” in Japanese. I love the atmosphere at Pulsii which has a skylight in the middle of the space, along with long tables for big groups and cosy small tables as well. The kitchen is semi-opened concept where you can also enjoy the open-flame cooking techniques by the team.
The Food Dishes start from wallet-friendly S$6 and you can expect the use of mainly Japanese ingredients along with French culinary techniques of cooking.
I started with the Chef’s Canape’s – 3 Kinds (S$20), where I had a trio of Japanese sweet prawn tart with caviar; Ham and cheese canelé; and Foie gras croquette. I love the flavours of each bite, which are distinct on its own, and the Foie gras croquette is my favourite of the lot with the richest flavour.
Next up I had the Brandade Croquettes (S$4 per pc, min. 2 pcs) where the golden spheres of brandade is a rich Mediterranean spread of whipped salt cod and potato, topped with onion relish.
A refreshing take on the country-style Mousse De Foie De Volaille is Chicken Liver Mousse (S$8 per pc, min. 2 pcs). A delicious and well-balanced flavour of the chicken liver pate along with apple and raisin jam, a dash of whisky, atop a soft brioche.
A more luxurious bite to go for would be the Uni Seaweed Brioche (S$15 per pc, min. 2 pcs) for sure.
The Truffle Souffle Omelette with Beef Stew (S$16) is quite an ingenious idea of combining two dishes in one. My first time having beef stew within an omelette, and it goes well with the egg.
I also recommend the Yuzu Cervelle De Canut (S$29), which comes with a duo of tuna and caviar in the creamy cheese.
My favourite part of this dish though is the accompanying housemade potato gaufrettes, paper-thin crisps with a criss-cross design which you can have it with the dip! The crisp chips are so good even just on its own.
On to proteins. the Grilled Yellowtail (S$26) spots a beautiful pink hue with a lovely texture and slightly smoky edges. It is paired with a velvety shungiku (chrysanthemum leaves) puree which has a slightly bitter note.
The star protein on the menu is the Magret Duck Breast (S$55) which uses specially flown in French Moulard duck. The medium-rare duck breast is tender and flavourful, one of the better duck breast renditions I have had for sure. Accompaniments include the maitake mushroom, lotus root, charred burdock root, a dusting of beetroot powder, and miso balsamic sauce.
Alternatively, there is also the Rack of Iberico Pork 200g (S$48) which also spots a nice pink hue and tender texture. It is served with Japanese corn on the side and potato puree.
The restaurant also runs The Social Pour, a weekday special from Mondays to Thursdays from 12pm to 7pm. S$9.90 per glass from a curated selection that includes house wines, prosecco, house spirits, beer, highballs, and selected cocktails. Wednesday is Ladies’ Night, where ladies enjoy wines of red, white, sparkling, house-pour spirits, Aperol Spritzes and shochu highballs, beer and Japanese sake free flow from 7pm to 9pm at S$38 for women, and S$48 for men.
Rants It would be better if the staff could provide a short introduction to each dish as it is served.
Will I Return Again? Great meal I had at Pulsii French Bistro & Bar, where prices are fairly reasonable for Tras Street. The flavours of the dishes are robust, and I can see myself returning to have some of the dishes again. The setting and ambience are also quite versatile as it works for couples, small groups or big groups.
