Ingredients

2 (15 oz) cans chickpeas, drained and rinsed
1 red onion, diced
3 garlic cloves, minced
1/4 cups sundried tomatoes in oil, chopped
4 teaspoons oil from sundried tomatoes
Garlic powder
Smoked paprika
Italian seasoning or Greek seasoning blend
1/2 cup nutritional yeast
Salt and black pepper, to taste
2 cups unsweetened original dairy free milk (or dairy free heavy cream)
1.5 cups vegetable broth
4 tablespoons dairy-free cream cheese
3 cups shredded kale
1.5 cups cherry tomatoes, halved

Low-Fat Substitutions

-Use fat free milk (thicken liquid with a cornstarch slurry–1 tablespoon cornstarch + 1 tablespoon water)
-Use sundried tomatoes not packed in oil
-Omit the cream cheese
