I get the olives and feta from Aldi's. It's about $4 for the cheese, so i use $1 worth of cheese for a full meal. The olives were less than $4, and they make about 10 meals.

Tomatoes, onions, and cucumbers are tossed with red wine vinegar and olive oil. It's a cheap, healthy meal.

    Forgot the recipe. 1 cup grape tomatoes, sliced. 1/2 cup sliced cucumber. A few slices of onions. 1/4 block of feta in brine. Kalamata olives to taste.

    Mix together and add red wine vinegar and olive oil to taste.

    my mother is greek used to make this for me all the time as a kid, truly so good and so healthy!

  3. looks like about 250 kcal. Say 150 for the cheese, 40 for the olives, 35 for the tomatoes. and 15 combined between cucumbers, onions and the residual sugar in the vinegar.

    If you don’t live near an aldi I don’t think that you’d be able to call this a budget meal.

    That’s not a healthy meal for a human. Maybe for a rabbit. You need much more protein.
