Delicious Turkish pide
For the Dough:
4 pieces
• All-purpose flour – 400 g
• Warm water – 300g
• Dry yeast – 10 g
• Sugar – 10 g
• Salt – 10 g
• Olive oil – 20 g
For the Filling:
• Ground beef or lamb – 350 g (about 10 oz)
• Onion – 1 small, finely chopped
• Tomato – 1, peeled and finely chopped
• Green bell pepper – ½, finely chopped (optional)
• Tomato paste – 1 tbsp
• Garlic – 1 clove, minced (optional)
• Salt, pepper, paprika – to taste
Instructions
1. Make the Dough:
1. Mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
2. Add olive oil, salt, and gradually mix in the flour.
3. Knead into a soft dough, cover, and let rise for 1 hour in a warm place. Or night in a fridge.
2. Prepare the Filling:
1. Filling:
• In a pan, sauté the onion first, then add the meat and tomato.
• Add the spices and cook until done.
• Let it cool.
3. Shape the Pide:
1. Preheat oven to 220°C (430°F).
2. Divide dough into 4 balls.
3. Roll each into an oval shape (about 25–30 cm long).
4. Spread a thin layer of filling over the center, leaving edges free.
5. Fold and pinch the sides to make a boat shape.
4. Bake:
Bake for 12–15 minutes until golden and cooked through.
