Ta Sarakostiana: Fakes or Greek traditional lentil soup, is an easy delicious nutritious and satisfying vegan soup! Based to Mediterranean diet we should consume 1-2 times a week legumes and what could be better than fakes ( lentil) soup which is perfect for the great Greek lent!
Recipe below ⬇️
⚫️ ingredients:
– 1 1/2 cups brown lentils
– 1 big onion diced
– 1 bunch of scallions
– 3 garlic cloves
– 1 handful parsley
– 2 carrots thickly sliced
– 2 bay leaves
– salt and pepper as needed
– 1 cup tomato sauce or 1tbsp tomato paste or 2-3 fresh tomatoes either diced or puréed grated ( whatever you have handy)
– 1,5 – 2 Liters water
– extra virgin olive oil for cooking and garnishing
– oregano and a splash of red wine vinegar for garnish
⚫️ instructions:
– into a large pot add some olive oil and sauté the onions, the scallions and the garlic and sauté for about 8 mins, then add the tomato sauce ( or whatever you have handy, tomato paste, or fresh tomatoes) and let cook for 5 minutes, then add the water, the carrots, the parsley , the bay leaves, cover and let cook for about 30-40 mins covered over a medium heat ( please adjust the water depending on how thick or soupy consistency you like, also the more you cook them the creamier and thicker consistency will get, personally I like them more creamier and thicker in consistency)
– when fakes are ready garnish with oregano, extra virgin olive and a splash of red wine vinegar and end enjoy with crispy grilled or toasted bread and olives!
