    4lb whole chicken, spine removed
    3 potatoes, wedged
    1 large onion, thick rounds or slices

    Marinade:
    1/4 cup olive oil
    2 tsp salt
    1 tsp black pepper
    1.5 tsp garlic powder, onion powder, paprika, coriander

    Sauce:
    6 garlic cloves
    Juice of 1 large lemon
    1 tbs olive oil
    1/2 cup water
    1/2 tsp salt

    Place the chicken, potatoes and onions in a baking tray. Season with all the marinade ingredients, then lay the potatoes around the chicken in a single layer. Bake uncovered at 400 for about 30 mins, then pour the sauce over the potatoes, and baste the chicken a little, trying to avoid putting large chunks of garlic on top of the chicken. Bake for another 20-30 minutes or until chicken skin is browned and crispy. Enjoy with pita bread and a side salad or plate of fresh vegetables, or with rice, or on its own.

  3. You can stick lemons ( 2 small) inside cavity if you don’t know hot to spatchcock a chicken. The lemons need to be forked all over and “baste” chicken from inside. I salt chicken like the sea and cook for about 1.5 hours with a flip of whole chicken. Potatoes will absorb drippings and taste delicious as salt and chicken fat season the potatoes. ❤

Not particularly ethnic here, but my grandmother's response to me asking how she made her baked Mac n cheese was to hang to the phone with it answering, a few weeks later I get a package in the mail with powdered mustard and a two word note 'use this' no other explanation…. Never brought it up again either.

  5. For years I begged my dad to tell me his family favorite chicken stew. He always went "eeeeeeeeh. I don't really want your mother to have it" he was diagnosed with pancreatic cancer and shortly before he started declining he randomly handed me the recipe on a nice card, perfectly hand-written. Miss that man every day. ❤

  6. Actually quiet related to your father on this whenever i make chai at home which is a type to tea my mom always asks me how long should it simmer on the stove while i just reply the best way is to simply forget about it and until you'll remember it'll already be done

  10. I gatekeep my recipes to my in laws, they hate me anyway so why would i share. They keep on interfering when jm cooking saying im not doing it right or the way they want to, but once im done they always ask how is it so tasty, how do i do it lol. Such a BS

  11. Wow. Grew up eating exactly this (add carrots), We'd call it potroast chicken. Cool how it either traveled or was a similar mindset situation.
