I have wanted to make English Muffins for a few decades. Seriously! They were so easy. I “baked” them on the stove top on a cast iron griddle pan. My biggest concern was whether or not they would be cooked thru. My husband came into the kitchen wanting to try them so I cut into one with a fork and it was cooked perfectly. My only complaint with the process was that I made a mess of my stovetop (cornmeal everywhere!). The recipe is from a blog called “Powered by Mom”.     Oh, how beautiful! There’s nothing quite like homemade english muffins!

    I make them weekly (between 15-18 at a time) and freeze them so I can take out one or two at a time. I make mine multigrain, so they have some more fiber, protein, and texture. My wife says they are the best thing I’ve ever “baked”!
