If you’re one of those moms who convinces herself that right after this XYZ thing, life will slow down — only to repeat a similar refrain every week — then chances are, you’ve googled “quick dinner recipe” more times than you want to admit. We get it! Life has a way of filling in all the blank spots in your calendar, and the last thing we want to use our own functioning brain cell left on is a complicated dinner. Thankfully, Ina Garten knows exactly what we need: a fast and easy recipe that is perfect for spring! The Barefoot Contessa just shared one of her personal favorite “quick dinner” meals, and you won’t believe how flavorful it is.

The dinner in question? Garten’s Roasted Salmon with Green Herbs. This delicious meal is full of flavor, especially this time of year, and is simple to put together on busy weeknights. In a video on Food Network’s YouTube Channel, Garten walks us through this easy dish.

“Everybody needs a few ideas for a quick dinner up their sleeve,” Garten says in the clip, adding that this is “one of [her] favorites.” Use a fresh salmon fillet with no skin, she places it into a dish to season it. Garten pours olive oil, lemon juice, and other ingredients over the baking dish, before adding some freshly chopped green herbs to the entrée.

“One of the nicest things about this dish is it cooks so quickly, and it keeps the herbs really bright green,” Garten explains in the video, adding that it’s “a really gorgeous dish.” This is no Hamburger Helper, in other words (although there is certainly nothing wrong with a boxed dinner!).

Finally, pour a little white wine in the dish and pop it in the oven. When it’s done, cover with aluminum foil and let it keep cooking on the counter while you check on the kids — or maybe prop your feet up with some of that white wine from earlier!

When it’s time to dish up this meal, Garten slices the salmon into six pieces, then she garnishes it with more herbs and adds some lemon wedges to the plate. “That was pretty easy!” she comments at the end, seemingly even shocking herself with how quick the entire dish came together.

Garten is queen of easy recipes, which will come in handy when you want to find some delicious sides to pair with this salmon dinner. From cacio e pepe roasted asparagus to summer garden pasta, Garten has something for every tastebud.
