Got a prime brisket. Second try in this. Trying no wrap at 225. Photo is like 12hrs in. Noticed this morning there is no stall… is this normal? Brisket felt good still not probe tender planning in checking once it hits 195 any advice?

    I’ve had em go right to 200 non stop and I’ve had 4 hour stalls, it’s all BBQ magic.

    If mine stalls, I just push temp from 250 to 275.
