For the nigiris – when you make the sashimi cuts, do a more diagonal cut to get longer pieces instead of straight up perpendicular cuts.
Also when putting fish on top of rice, give it a gentle squeeze from the sides of the nigiri, not the top.

Too much rice with the nigiri. Fish cuts are too thin. This is the way they make sushi at robata or AYCE sushi places.
Since you’re at home and can be more generous, I’d use less rice and cut your sashimi thicker. If you go to a high-end sushi place, they might give you a thick, long slab of fish and maybe half as much rice as you’re using (on your nigiri).
This is awesome that you’re learning, though. Nice job.
