  1. Turkish Vegan Lahana Sarması (Cabbage Rolls)
    Soft, savory, herby & wholesome – this recipe is plant-based comfort in every bite!
    Perfect with a side of yogurt or just on its own with love and tea.

    What You’ll Need:
    🥬 1 cabbage (sliced & softened in boiling water)
    🌾 1 cup cooked bulgur
    🧅 1 grated onion
    🧄 3 cloves garlic, grated
    🌿 ½ cup mix of parsley & cilantro + a little mint
    🫒 2 tbsp olive oil
    🌶️ 1 tbsp red bell pepper paste
    🧂 Seasonings: salt, pepper, pul biber, paprika

    Steps:
    1️⃣ Boil cabbage leaves for 5 mins, then shock in cold water – makes them soft & rollable!
    2️⃣ In a bowl, mix bulgur, herbs, onion, garlic, olive oil, pepper paste & seasonings.
    3️⃣ Lay a cabbage leaf, add a spoonful of filling, and roll it up tightly (like a mini burrito).
    4️⃣ Oil the bottom of your pot and neatly layer your rolls inside.
    5️⃣ In a cup, mix 1 tbsp pepper paste, warm water & 1 tsp olive oil – pour over the rolls.
    6️⃣ Cover and cook on low heat for 1 hour until tender & packed with flavor.

    ✨ Enjoy warm with a drizzle of olive oil or lemon juice – so cozy, so satisfying!
