  4. Yep, they’re delicious, bit of a pain to fillet though.

    Do it! The poaching method where you remove the bones after it’s cooked gets rid of the whole “pain to fillet” aspect. Look up flounder in court bouillon. Flatfishes are as tasty as they are ugly.

    One of the best dishes I ever had was flounder stuffed with crabmeat at the Commander’s Palace in New Orleans.

  7. Ooooh yes! I love Maangchi’s flatfish recipe with flounder. Or, just bread and fry ‘em up and serve with tartar sauce. Can’t go wrong.

    We have fluke aka “summer flounder” off the east coast too. A bit heartier meat. Identifiers are eyes on the left side, and often have ringed, eye-like spots near their tail and on their back.
