    I’d argue that’s the perfect amount of chicken feet. That broth must be silk on the tongue when warm.

    Yeah it’s supposed to be like that at room temp. If it’s hot it won’t congeal.

  8. My butcher sells beef feet, which I boil with bones before I make my stew. It looks the same, if not more solid than this when at room temp.

    Now make a “broth” with even more chicken feet. Season it how you like. Chill. Cut into chunks. Toss with vinegar, chopped garlic, cilantro, or whatever spices of these families you like. Oh toasted sesame oil is good.
